Fehma's Rice, Version 3

This is Fehma’s rice recipe that has chicken in it ;-) Serve with Chicken Dish, Version 2 and Fehma’s Potatoes & Eggplant dish.

  • 2 1/2 cups basmati brown rice
  • 1 onion, cut against the grain into long, thin slices
  • Olive oil
  • 3 garlic cloves, thinly sliced
  • 1/2” ginger root, thinly sliced in 2 directions
  • 1/2 of a boneless skinless chicken breast, cut into 1/2” pieces
  • 1 1/2 teaspoon salt
  • 2 1/2 teaspoon meat masala
  • 1/2 small long green chili peppers, diced
  • 3/4 teaspoon garam masala

Cover rice with water – let soak 15-30 min. Meanwhile, saute onion in oil in bottom of 6 qt. Dutch oven. Add garlic and ginger. Add uncooked chicken, 6 cups water, salt, meat masala, and diced chili pepper. Drain rice and add to pot along with garam masala. Simmer until all water is absorbed.

Makes abt 8 cups of rice!
