Sesame Honey Beef Stir Fry

This recipe originally comes from Hello Fresh. It is great as a quick and easy and still yummy dish. Serves 4.

  • 2 tablespoons sesame oil, divided
  • 6 tablespoons soy sauce, divided
  • 2 ounces honey, divided
  • Sriracha to taste
  • Olive oil for cooking
  • 4 carrots, peeled and shaved into ribbons- Salt and pepper to taste
  • 4 cloves garlic, minced
  • 4 scallions, thinly sliced, greens and white separate- 1 1/4 pounds ground beef
  • 1 lime, cut into wedges for finishing, serving- 3 cups cooked hot rice for serving
  • Sesame seeds for serving

Combine 1 tablespoon each of sesame oil and soy sauce, 2 tablespoons honey, and sriracha to taste; set aside. Heat a drizzle of oil in a large pan over medium heat and cook carrots until tender, 4-5 minutes. Season with salt and pepper. Remove carrots from pan and heat another drizzle of oil; cook garlic and scallion whites until fragrant, about 30 seconds. Add beef, cooking until no longer pink, about 4 minutes. Increase heat to high and cook stirring only once or twice, until brown and crispy in spots, about 3 minutes. Season with salt and pepper. Add carrots to pan along with remaining soy sauce and honey. Toss to combine and stir in remaining sesame oil and a couple squeezes of lime. Divide rice and stir fry between bowls and sprinkle with scallion greens and sesame seeds. Top with sriracha mixture to taste, and lime wedges on the side.
