Heather Mengel's Pumpkin Roll

This is the recipe that Tyler’s cousin Heather uses to make a pumpkin roll every Thanksgiving. Tyler LOVES this pumpkin roll and always eats a lot of it.

  • 3 eggs
  • 1 1/2 cup granulated sugar, divided
  • 2/3 cup pumpkin
  • 3/4 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup chopped nuts (optional)
  • 1 cup powdered sugar for filling, plus more for- sprinkling on wax paper used to roll cake
  • 12 ounces cream cheese, softened
  • 6 tablespoons butter, softened
  • 2 teaspoons vanilla

Make cake: Preheat oven to 350. Beat together eggs and 1 cup sugar until thick and fluffy. Add pumpkin, stir in dry ingredients. Spread mixture over a greased jelly roll pan. If desired, sprinkle with chopped nuts Bake for 15 minutes. After baking, flip pan over onto a sheet of wax paper sprinkled with powdered sugar. Roll up in paper and refrigerate for 1 hour.

Make filling: While cake is cooling, prepare filling. Beat together 1/2 cup granulated sugar, cream cheese, butter, vanilla, and 1 cup powdered sugar. Beat until smooth.

Once cooled, unroll cake and spread filling over the cake. Roll up like a jelly roll. Wrap in foil and refrigerate.
