Dilled Alaskan Garden Medley

Recommend serving this with the Halibut in Foil with Parsley Shrimp Sauce (see previous pages).

  • 2 tablespoons oil
  • 4 cups coarsely chopped cabbage
  • 1 cup chopped onions
  • 1 cup chopped green or firm red tomatoes
  • 1 cup coarsely shredded carrots
  • 1 tablespoon chopped fresh dill or 1 teaspoon dried- dill weed
  • 1/2 teaspoon salt

Heat oil in large skillet over med-high heat. Add vegetables. Cook and stir 8 to 10 minutes until vegetables are crisp-tender. Stir in dill and salt. Reduce heat; cover and cook 2 to 3 minutes or until vegetables are tender. Serves 7.
