Cranberry Strawberry Crisp

This is another recipe that Mom recommends that you either make ahead of time and bring it along, or if you’re feeling extra ambitious you can make it in a reflector oven while you are camping. Ask Mom about how to make a reflector oven, or you could probably find it on Google. #lmetfy

  • 3 cups coarsely chopped cranberries
  • 2 cups sliced strawberries
  • 3/4 cup sugar
  • 2 tablespoons flour plus additional 3/4 cup flour- 3/4 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup margarine, softened

Heat over to 375. Place cranberries and strawberries in ungreased 8” square glass baking dish; stir to combine. In small bowl, combine sugar and 2 tablespoons flour; sprinkle over fruit. In large bowl, combine flour and remaining ingredients; mix with fork or pastry blender until crumbly. Sprinkle crumb mixture evenly over berries. Back at 375 for 35-45 minutes or until fruit is bubbly and topping is deep golden brown. Serve warm with cream, ice cream or whipped cream. Serves 10.
