Owl Cookies

Mom loves when you make these “owls” into aliens.

  • 1 1/2 squares (1 1/2 oz.) unsweetened chocolate
  • 1/4 teaspoon baking soda
  • 2 1/2 cups flour
  • 2 teaspoons of baking powder
  • 1/2 teaspoon salt
  • 3/4 cup margarine
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • About 100 chocolate chips (for eyes)
  • About 50 cashew nuts (for beaks)

Melt unsweetened chocolate (in microwave 2 min, stir; micro 30 sec, stir; micro 30 sec, stir) and let cool. Mix in baking soda and set aside. Sift together flour, baking powder, and salt, and set aside. In a large mixing bowl, cream margarine and brown sugar. Add egg and vanilla and beat well. Blend dry ingredients in gradually. Remove 2/3 of dough to floured surface, and blend chocolate mixture with the remaining dough. Chill. Roll out half of the light dough to a 10” x 4 1/4” strip. Shape half of chocolate dough into roll 10” long. Place strip on light dough and mold light dough over dark. Wrap in aluminum foil. Repeat with remaining dough. Chill for at least two hours. Cut into slices 1/8-1/4” thick and place two slices together on greased cookie sheet to resemble an owl. Pinch corner of each slice to form ear. Put chocolate chips for eyes and cashew nut for a beak. Bake at 350 for 8-12 minutes.

Makes about 4 dozen cookies.
