Serve with Beef Dish, Version 2 , Potato Dish , and Masoor / Lentils .
Saute okra in olive oil in large pot on med heat, stirring periodically until brown. Add tomatoes and onions. Add garlic, 2 teaspoons ginger root, paprika, and salt. Cover and simmer on med heat. Add garam masala. Cook until all is soft and well combined.
