Mom's Apple-Raisin Spice Cake

  • 2 cups sugar
  • 1 cup mayonnaise
  • 1/3 cup milk
  • 2 eggs
  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 3 cups chopped and peeled apples (abt 2 lg)
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • 8 oz tub cool whip

Grease 2 round (9”) baking pans. In large bowl with mixer at low speed combine first 4 ingredients. Mix well. Add flour and spices, and beat for 2 minutes, scraping bowl frequently. (Batter will be very thick.) With spoon, stir in apples, raisins and nuts. Spoon batter into pans. Bake at 350 degrees for 35-45 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove; cool; frost each layer with whipped cream and stack. Store in refrigerator.
