Grandmother's Strawberry Glazed Cheese Cake

This is Grandmother’s recipe for cheese cake covered in strawberries.

Crust:

  • 1 1/4 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup margarine (melted)

Cheese Cake:

  • 1 lb. cream cheese (room temp.)
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 3 eggs

Glaze:

  • 1 pkg. (10 oz.) frozen strawberries - thawed
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 2 tablespoons sugar

Combine crumbs and sugar; add butter and mix. Press into 9” pie plate. Blend cream cheese, sugar, and vanilla. Beat in eggs until smooth and creamy. Pour into crust. Bake in 350 degree oven for 45 minutes or until firm. Test for done-ness by inserting a knife in the center. If it comes out clean, its done. Remove from oven and cool. Place cornstarch, sugar, and strawberries in saucepan. Bring to a boil and cook until thickened and clear. Remove from heat. Add lemon juice. Spread over top of cooled cheese cake
