Grandmother's Chocolate Mousse Brownies

This is another recipe that I don’t remember, but Mom says its good, ‘cept it has lots of chocolate chips and 6 eggs. Its very rich!

Brownies:

  • 1/2 cup margarine
  • 1 pkg. (12 oz.) chocolate chips
  • 2 cups sugar
  • 1 1/4 cups flour
  • 2 teaspoons vanilla
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 eggs
  • 1/2 cup chopped pecans

Mousse Topping:

  • 3/4 cup heavy cream
  • 1 sm. pkg. (6 oz.) chocolate chips
  • 3 eggs
  • 1 1/2 teaspoon vanilla
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Brownies: In a large microwave safe bowl, melt margarine and chocolate chips on high for 2 minutes, stirring every 30 seconds; cool slightly. In a mixer bowl, beat remaining brownie ingredients (except pecans) until smooth. Stir in pecans and chocolate mixture.Spread in a greased 9x13” pan and set aside.

Mousse Topping: In a microwave safe bowl, melt cream and chocolate chips on high for 2 minutes, stirring every 30 seconds; cool slightly. In a mixer bowl, beat remaining mousse ingredients (except pecans) until foamy (abt 3-4 min); stir in chocolate mixture. Pour mousse topping over brownies; sprinkle with pecans. Bake in 350 degree oven for 50-55 minutes. Let cool 2 hours before cutting into squares.

Makes 48 brownies.
