Grandmama's Birthday Cake and Filling

This is the cake with pineapple in it that we always have at Grandmama’s birthday parties. The icing instructions are on next page.

Pound Cake:

  • 1/2 lb. margarine (2 sticks)
  • 2 cups sugar
  • 4 eggs
  • 3 cups Presto cake flour, sifted, OR 3 cups flour, 1 1/2 teaspoon baking powder, and 1/2 teaspoon salt
  • 1 cup milk
  • 1/2 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract

Beat butter and sugar together. Gradually add eggs one at a time. Then add flour alternately with milk. Mix well. Bake in greased tube pan, 375 degrees for 45 minutes. Let cool in pan 15 minutes, then remove.

Pineapple Filling:

  • 6 tablespoons granulated sugar
  • 4 1/2 teaspoons cornstarch
  • 1 1/2 cups canned crushed pineapple
  • 1 tablespoon lemon juice

Simmer all ingredients, stirring until thick. Cool.
