Fehma's Rice, Version 2

Another version of Fehma’s rice; serve with Beef and Potato Dish .

  • 2 1/2 cups basmati brown rice
  • 1 clove garlic, diced
  • 1/2 onion, cut against grain into long, thin slices
  • Olive oil
  • 1 lb. boneless skinless chicken breast, cut into 1/2” pieces
  • 1 teaspoon salt
  • 2 teaspoon vegetable curry mix
  • 2 teaspoon garam masala
  • 1/2 potato, peeled, boiled (until fork inserts easily) and cut into 3/4” pieces

In large bowl, cover rice with water for 1/2 hour to soak. Meanwhile, in a large pot, saute garlic and onion in olive oil. Add chicken and cook with the onion and garlic until done. Add 1/2 cup water and salt. Add vegetable curry mix, garam masala and potato. Drain the rice, and add to chicken mixture along with 3 cups of water. Cover and simmer until water is gone.
