Canoe Island Lodge Tortilla Crusted Tilapia

This is the really good fish that we have at CIL. Dad says its REALLY good - ranks up there with his favorite chicken pot pie.

  • 1 lb. tilapia fillets (6-7 oz. each)
  • 1/3 cup flour
  • egg wash (1 egg and 1 Tbl. water (mixed together well)

Tortilla crust ingredients:

  • 1 cup tortilla corn chips coarsely crushed
  • 2 tablespoons green bell peppers, finely minced
  • 2 tablespoons red bell pepper, finely minced
  • 1 teaspoon lime zest
  • 1/2 teaspoon jalapeno pepper (chopped very fine)
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cilantro, minced
  • Salt and pepper to taste
  • 2 oz. olive oil or butter

Mix together tortilla crust ingredients. Dredge fish in four; dip fish in egg wash; dredge fish in tortilla crust mixture, gently pressing crust onto fish. Pan fry in oil on med heat until golden brown and crispy on both sides. Adjust seasoning to taste. Serve with Corn Salsa (next page), wild rice and green beans.
