Aunt Pat's Apple Nut Cake

Really good apple nut cake with chunks of apple - great served warm with whipped cream

  • 1 1/2 cup oil (or substitute applesauce)
  • 2 cups sugar
  • 3 eggs
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 3 cups peeled, cored apples, cut into chunks (abt 1 1/2 lg apples)
  • 1 cup chopped walnuts
  • 1 cup raisins (optional)

Beat oil/applesauce and sugar together. Add eggs, beat until creamy. Sift together flour, salt, baking soda and cinnamon. Stir into batter. Add vanilla. Fold in all remaining ingredients (batter will be very thick). Turn mixture into greased 9” tube (bundt) pan. Bake at 350 degrees for 1 - 1 1/4 hours, until toothpick inserted in the middle comes out clean. Stores well.
