Spicy Fruit Cake
From Cortesi Food
Note: I just want to clarify that I do not actually like this (or any other) fruit cake, and it is only in here because Mom is making me put it in here. As fruit cakes go, this one is not that bad.
- 1 cup margarine
- 2 cups brown sugar
- 6 eggs
- 3 cups sifted flour
- 1 teaspoon baking powder
- 3/4 teaspoon salt
- 1/2 teaspoon ground cloves
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 cup apple jelly
- 1/2 lb. chopped nuts
- 1 lb. white raisins
- 1/4 lb. cut candied citron
- 1/4 lb. cut candied orange peel
- 1/4 lb. cut candied lemon peel
- 1/4 lb. cut candied cherries
- 1/4 lb. cut candied pineapple
Cream shortening and sugar. Slightly beat eggs and add to creamed mix. Add eggs. Sift dry ingredients. Stir into sugar mixture alternately with jelly. Blend in fruit and nuts. Pour into a paper-lined, well greased and floured 10" tube pan. Bake at 300 degrees for 2 1/2 - 3 hours. Cool cake in pan for 1/2 hour.
