Okra Dish

Serve with Beef Dish, Version 2, Potato Dish, and Masoor / Lentils.

  • 8 oz. okra (approx 25), cut into ½” slices
  • Olive oil
  • 2 tomatoes, chopped
  • 1 1/2 onions, cut against the grain into long, thin slices
  • 1/2 garlic bulb, each clove peeled and sliced thinly
  • 1 1/2 inch ginger root, diced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 2 teaspoons garam masala

Saute okra in olive oil in large pot on med heat, stirring periodically until brown. Add tomatoes and onions. Add garlic, 2 teaspoons ginger root, paprika, and salt. Cover and simmer on med heat. Add garam masala. Cook until all is soft and well combined.
