Mom's Apple-Raisin Spice Cake

Good moist spice cake (with apples and raisins).
- 2 cups sugar
- 1 cup mayonnaise
- 1/3 cup milk
- 2 eggs
- 3 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoon cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1/4 teaspoon ground cloves
- 3 cups chopped and peeled apples (abt 2 lg)
- 1 cup raisins
- 1/2 cup chopped walnuts
- 8 oz tub cool whip
Grease 2 round (9") baking pans. In large bowl with mixer at low speed combine first 4 ingredients. Mix well. Add flour and spices, and beat for 2 minutes, scraping bowl frequently. (Batter will be very thick.) With spoon, stir in apples, raisins and nuts. Spoon batter into pans. Bake at 350 degrees for 35-45 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove; cool; frost each layer with whipped cream and stack. Store in refrigerator.
