Chocolate Roll with Cinnamon Whipped Cream

Jelly Roll ingredients, except jelly, plus:
- 1/4 cup cocoa
Cinnamon Whipped Cream:
- 1 cup chilled whipping cream
- 3 tablespoons granulated or powdered sugar
- 1/2 teaspoon ground cinnamon
Chocolate Glaze (optional)
- 2 squares (1 oz. each) unsweetened chocolate
- 3 tablespoons margarine or butter
- 1 cup powdered sugar
- 3/4 teaspoon vanilla
- About 2 tablespoons hot water
Prepare Jelly Roll as directed except as follows:
- Beat in 1/4 cup cocoa with the flour.
- Substitute Cinnamon Whipped Cream for jelly.
- Drizzle roll with (optional) Chocolate Glaze instead of sprinkling with powdered sugar, and garnish with fresh fruit.
Cinnamon Whipped Cream:
Beat chilled whipping cream, sugar, and cinnamon in chilled bowl until stiff.
Chocolate Glaze: Heat chocolate and margarine over low heat until melted. Remove from heat; stir in powdered sugar and vanilla. Stir in water, 1 teaspoon at a time, until glaze is of desired consistency.
